
Ok this is a total bite off Mrs Brunetti’s Blog, but I do enjoy a little cooking & I love nothing better than something I can snack on that does not take too long.
But I cook some killer dishes all the time...made this wicked Beef Rendang Curry when the Vogel’s stayed at my place.
So I love some spice & most people I know love a can of Tuna...well my Guru of Indian food Madhur Jaffery put these 2 things together &came up with nice alternative to your Tuna Mayo !
You will need:-
1 can Tuna in Sunflower Oil
1 Tbl Spoon Curry Powder ( I recommend a Bombay Curry Powder...Thank You)
1 Tea Spoon of Ground Coriander
Half an Onion - Finely Chopped
2 Cloves of Garlic - Finely Chopped or Squashed...however you do it does not matter just as long as there is some garlic in there...you get me.
1 Chili Chopped into rings : ) Keep the seeds for the fire !!! if you do not like the chili leave it the fuck out.
Chopped Ginger (about the size of your pinkie to the 1st knuckle...you know)
1 Tbl Spoon of chopped Coriander
Ok Take a Frying pan & heat it up....
Add about a Tbl Spoon of Veg or Sunflower Oil.
Throw in the Onions & Garlic & cook till Browned at the edges...on a medium heat...say 3-4 Mins.
Once that is done, add in the Curry Powder & the Ground Coriander...stir over a couple of times until the onions & garlic are covered.
Turn up the heat & throw in the Tuna & Oil & give it a good stir through for about 3 mins.
Turn down the heat & add the Chili, Ginger & Chopped Coriander & cook for a further 2 mins.
After that your kitchen will smell delicious & you will have a killer snack you can serve on Toast or get some Tortilla’s...if you want to be real Authentic, get some Chapatis sorted.
